Turkey, bacon & lettuce

TURKEY, BACON AND LETTUCE SANDWICH
Here's a lovely combination - turkey, bacon & lettuce. The turkey was exceptionally moist and goes perfectly with the salty bacon. Soft fluffy white bread, toasted on one side gives a chewy, crunchy bite.
We spread the toasted side of the bread with cranberry sauce, topped with turkey, bacon and finally lettuce. Add a dollop of good mayonnaise on the other slice of bread.
To achieve tender, moist slices of turkey breast we used this method:
Weigh the turkey breast and place into a saucepan of water. Add a chicken stock cube as this will give it a bit of flavour. Bring the water to the boil, then immediately turn down to a simmer. Poach the turkey for roughly 20 mins per pound. Our 750g turkey breast was simmered for 30 minutes. Then we turned the heat off and left the turkey in the saucepan as it cooled down. We now have plenty of turkey breast for sandwiches for the week. This is so much cheaper than buying sliced meat from the deli - and you can add your own flavourings. You could cut some very thick slices and use this as part of a cooked dinner.
