GLORIOUS RED CABBAGE

RED CABBAGE
This glorious RED CABBAGE is like a jewel on the plate.
It's a very easy dish to make and freeze. Everyone loves this at Christmas and it will brighten up any plate. Very low in calories too.
What prompted me to make the red cabbage now was I spotted a huge football sized cabbage on sale at our local fruit and veg stall. It weighed just over 2 kg and cost £1. I can't resist a bargain! A couple of hours later and I had enough red cabbage to feed Bristol. The recipe below is based on a half kilo red cabbage and will feed six to eight people:

BRAISED RED CABBAGE
Ingredients
1/2 kg red cabbage
10 - 15g of butter
40 ml red wine vinegar
20 ml redcurrant jelly
25 ml port
tiny bit of cinnamon (about 1/4 tsp)
zest of half an orange (save other half for serving)
juice of half an orange
1 or 2 eating apples
1 small onion
some brown sugar (to taste - around 2 tsp)
salt and pepper

Slice the eating apples (take skin off if you prefer). Slice the red cabbage and onion.

Put the butter in a large pan. Add the red wine vinegar, redcurrant jelly, port, cinnamon, orange zest and orange juice, then heat through.

Throw in the cabbage, onion and apple and give it a good stir.

Season with a little salt and pepper and cook gently for 1 - 2 hours.

Half way through the cooking process, taste and add the brown sugar - add enough to lift the dish.

That's it. When you are ready to serve, use the other half of the orange zest and sprinkle this on top.
