Cheesy mushrooms

These CHEESY MUSHROOMS are simple to make and add a delicious low-calorie dimension to your meal. Quite often you concentrate so much on the main part of the meal and pay less attention to the side dishes.
But these are very more-ish and deserve their own blog post. We think you will be surprised at how little cheese you actually use. I've pepped mine up with a bit of spice too.
We ate these with our gammon and egg muffin, cooking them slowly in a frying pan. But they would go with lots of different meals.
We've also cooked them on the BBQ and they've gone down well with our guests.

CHEESY MUSHROOMS

Ingredients
2-4 chestnut mushrooms per person
cheddar cheese
tabasco sauce
salt/pepper

Clean the mushrooms - wipe with a damp cloth. Remove the stalk. Season with a little salt and pepper and a little tabasco.

Cut a small piece of cheddar (or similar melting cheese) just big enough to fill the hole. You don't need a lot, as the cheese spreads out as it melts. 

Place the mushrooms into a lightly greased frying pan. Cover with a lid initially. Cook over a slow heat until the liquid begins to evaporate - which could take 10 minutes.

Remove the lid and continue to cook until done. 

TIP: For a crunchy texture. If you have a few breadcrumbs, you could sprinkle them on top of the cheese, and when they are more or less cooked, pop under the grill to crisp up.
