Goat's cheese dressing

How many times have you eaten a salad in a restaurant or cafe and thought you would never be able to make it yourself? I know I've thought that many times. But here's a creamy dressing that is so quick to make - it must be attempted at least once! At just 60 calories each, we were impressed with the taste and simplicity to make.
We made our own goat's cheese dressing to coat some little gem lettuce, and added beetroot, tomato, onion and bacon.  Even more amazing this salad had a very low calorie count - with the salad itself coming to around 250 calories. (We could add more goat's cheese if we wanted to). Add 50g of bread and we were looking at under 400 calories. We found it extremely filling and delicious, but this is much lower in calories than we would like for lunch. If we do get hungry, we'll make sure we have something filling, rather than snack mindlessly.

For the goat's cheese salad dressing (to serve 2) we used 30g of soft/crumbly goat's cheese and mixed this with 30g of full fat creamy greek yoghurt, then we added enough milk to loosen the mix to a consistency we wanted. Depending on the type of cheese/yoghurt used the milk needed could be more or less, but for us we added 30g milk. Add salt and pepper to your liking. This dressing came to just 120 calories (60 calories each) - and tasted very luxurious.
